New Mexico State University recently discovered one of the world’s
hottest chilli pepper. Bhut Jolokia, a variety of chilli pepper originating in India, until recently was considered to
be the world's hottest chilli earning Guinness World Records’ recognition. It had blasted past the previous
champion Red Savina but has now been over taken by the Butch T Trinidad Scorpion. In replicated tests of Scoville heat
units (SHUs), Bhut Jolokia reached one million SHUs, almost double the SHUs of Red Savina, which measured a mere 577,000 BHUT JOLOKIA is a chili pepper
that grows primarily in Assam state of India, but also in northeastern India (Nagaland, Manipur), Bangladesh, and Sri
Lanka. In 2007, disagreement arose on whether it is a Capsicum frutescens or a Capsicum chinense. The
Indians claim it is a C. frutescens,but recent DNA tests have found that it is an inter-species hybrid, mostly C.
chinense with some C. frutescens genes. Extreme care should be taken when ingesting the pepper and
its seeds, so as to not get it in the eyes. It is used as a cure for stomach ailments. It is also used as a remedy to summer
heat, presumably by inducing perspiration. In northeastern India the peppers are smeared on fences or used in smoke bombs
as a safety precaution to keep wild elephants at a distance. Warning: extremely

Dorset Naga - CHILLI MANS Recommendation

The Dorset Naga, an exceptionally hot Bhut Jolokia relative. It was originally selected
from Naga Morich, a chilli that is highly regarded among Britain’s Bangladeshi community and is widely available in
shops. We are also catering to their culinary needs.
This rare chilli was developed by making selections
from the Bangladeshi landrace chilli known as Naga Morich. In common with its relatives, Dorset Naga has a scorching heat
of around a 1,000,000 Scoville Heat Units. Along with its heat, Dorset Naga is backed up by a powerful aroma that imbibes
any dish with a wonderful, distinctively fruity flavour. The fruit are roughly cone shaped, and about 2 cm wide at the shoulders
and up to 4 cm long, though they can be smaller.
Naga are traditionally used green, but we sell Dorset Naga at
both green and red stages in the sauce makers shop.

Bih Jolokia: Originated from Nagaland, Assam
 Extreme HOT
Close relative of
the Bhut Jolokia, and also commonly known as “Ghost Chilli” in Assam and is well known for its flavour and extreme
heat. The Bih jolokia belongs to the Bhut or Naga Family, so very similar in appearance, heat and taste, however
almost double the size. The chilli is usually consumed in red (full ripe). Botanical & Species name of the chilli
is Capsicum Chinense.

Red Savina
Heat: (SHU: 350,000 - 580,000)
Previous WORLD RECORD HOLDER ! 65 times
as hot as Jalapeno. It is said just one gram can cause detectable heat in 1,272 pounds of sauce.
The Red Savina pepper is a cultivar of the habanero chilli (Capsicum chinense ),
which has been selectively bred to produce hotter, heavier, and larger fruit. It is also commonly known as the Dominican Devil's
Tongue Pepper or the Ball of Fire Pepper in Guyana. Frank Garcia of GNS Spices, in Walnut,
California, is credited with being the developer of the Red Savina habanero.[1]
The exact method Garcia used to select the hottest strains is not publicly known. While
samples of Red Savina have been measured as high as 577,000 Scoville units, many chilli enthusiasts growing the Red Savina
have been unable to reach this level of heat, even with certified Red Savina seed.

Naga Morich  Species:Chinense Origin: Northern Bangladesh
Heat: 10++ UNTESTED SHU
Naga Morich meaning
'snake or serpent Chile’ It is believed to be very closely related in appearance, heat and flavour to
its Indian cousins the Bhut and Bih Jolokia. Naga Morich chilli pepper seeds are hard to find, and many time difficult to
distinguish from the Jolokias.
The thin walled wrinkled pods have a high degree of variability in shape although
they are generally wedge shaped with three locules and average about 2 inches long by 1 inch wide. They ripen from a rich
green through to yellow/orange and finally to a rich red approximately 120 days after transplanting.

This chile is one of the hottest. A Habanero relative, Plant
can grow tall, although 2ft is more common. The plant produces good yields of wide wrinkled extremely hot fruits which turn

FIRECRACKER PIQUIN -This plant has dark purple-green
leaves, does very well in containers, and produces masses of small conical erect growing pods. The pods are extremely fiery
and cover the plant with colours of brilliant bright metallic purple, as well as many shades of yellow, orange and red.

  HABANERO Most "chilli heads" would agree that the classic bright orange Habanero is the undisputed King of all the Chilli
species. Until recently it was considered to be the hottest chilli in the world, and is only a whisker behind the new leader
, the Red Habanero. (To get an idea of it's heat level, the Jalapeno is rated between 2,000 to 5,000 Scoville Units (S.U.'s),
whilst the Habanero is rated at over 300,000 S.U.'s.) Apart from it's intense heat, it also has a delicious intense
flavour and aroma, a little like apricot. It's a fairly tough plant, and have survived 4 to 6 Melbourne winters in pots.
Every chilli head should experience the unique taste of fresh Habanero's at least once before they die

BOLIVIA NIGHT SHADE This variety of Habanero is one of the hotter ones, and the dark green pods tend to develop
black shading on the sunny side. The pods then change to a very deep orange, and finally a bright red (with the black shading
remaining). The pods have a few deep ridges and grow 2 per node.

Sometimes called Congo Black. Mid to late season fruiting. This is a stunning
habanero type originating from Jamaica. Similar in appearance to other Habanero chillies but chocolate brown in colour (no
chocolate flavor). The fruits are extremely hot, up to 600,000 scoville units. The bushes grow large with strong woody
stems. Sometimes difficult to germinate, but well worth the effort. C.chinense

RED - CHILLIMANS top 10 This Savina variety is the world's hottest chilli (350,000 to 500,000 S.U.'s),
with all the flavour and aroma of the classic Orange Habanero except that the pods are bright red and glossy and have fairly

that undergo very little colour change from a very pale creamy green to a creamy white. Low heat level. | HABANERO

at both ends, which makes them look like white jellybeans hanging from the branches. These pods are white hot and start off
a very pale green, becoming ivory white at maturity. Grows very well in pots.
